I totally agree with you about Home Ec. Even knowing the work it takes to bake cookies from scratch helps show people what it actually takes to process food. Never mind the labor and resources (and oil) that it takes to make the flour and the eggs and the salt and the chocolate chips and the butter.

We have no idea and no respect for how complex even simple things are. And food is no different.

I would imagine food is going to get even more expensive when it can't depend on Big Oil, and people aren't going to like that. But there's a reason for that. Maybe the fuel for our bodies is so important it should be done right and it shouldn't be cheap--but that is not the narrative we've been taught to pursue here in America.
